Honey Garlic Chicken

Hey! 

Last night, I thought I would experiment in the kitchen. I have been baking for years but have continued to dislike cooking. Baking is a science! Everything is calculated around the fat level, liquids and dry ingredients. It is precise and mixing things up can cause the end product to be too dry or not cook all the way through. Cooking is every subjective and less calulated, therefore incredibly intimidating to me. 

As I am trying to change how I eat, I need to be trying new things. So I pulled out some chicken and thought I would throw some things together. 

I added 3 tablespoons of soya sauce, 1 tablespoon of honey, 4 tablespoons of extra virgin olive oil and 3 tablespoons of brown sugar.


I then added in 4 cloves of garlic and whisked together.


I added the chicken breasts to a glass dish and poured the sauce over. 


I baked them at 350 degrees celcius for 35 minutes. 


Once done cooking, I serve it with quinoa and salad. 


It turned out moist, delicious and I will definitely be making this again! I am also going to continue experimenting with cooking! 

I entered the recipe into My Fitness Pal and is calculated 277 calories for 1 piece!! (This will vary depending on the size of your chicken breast).

Healthy Lunch

Hey,

When previously trying to lose weight and get healthy, I would prep all of my meals for the week. This was great because I never had to worry what I ate day to day. The only issue was the week I was too busy to find time to set aside for meal prep, I would end up eating out everyday. This time around, I am not putting pressure on myself to do one or the other. 

I prepped today's lunch last night so I could get those extra minutes of sleep for a Monday morning. I decide to use the left over steak from dinner and make a salad. I also packed up my snacks and breakfast. 


After prepping everything, I weighed out all my food on my food scale. I added it into My Fitness Pal to ensure I was keeping with my daily calories. This has really helped me to know what I want for dinner and plan accordingly. 


The salad turned out perfect (although the steak was overdone but that was my issue from last night)! Very excited to be staying motivated and preparing meals :)

Welcome Back

Hey Everyone,

I have decided to start my blog back up to help me hit my goals from 2015 and beyond. I want to use this as a motivation for me and a way to track my life (like a diary). I have recently started a new Instagram focusing on my weight loss and getting myself to a healthy place. It has really been helpful to keep me accountable and share my journey. I not only want to make 2015 the best year ever but I want to make smart choices to change my future. 2014 was a hard year for me emotionally and I think I began to give up on a lot of aspects of my life. During 2014, my job was draining and caused me to feel defeated. I applied for, what felt like, 1000s of jobs and didn't get an interview for a single one. I felt lost and with nowhere to go. Although, I am still in the same job, I have changed my focus back to working on my cakes and myself. I need to take control of my life and move into a positive direction.
